Used cars are a HUGE market, an industry all its own. So there are established values for various cars through Edmunds, Kelley Blue Book, etc.
Used watches, and other collectibles, are not really an industry, so there is no accepted Standard for value. It's really a matter of what one collector is willing to pay for it. An appraiser is a person who's had a lot of experience with a field of collectibles and can estimate a possible range of values, which you may or may not ever get. But even a professional appraisal depends almost entirely on the item, itself, rather than such itmes in general. That's because it's the condition of the item that's important, including tiny imperfections that the average person wouldn't see or care about.
But also it depends on his knowledge of how many such items are still available in the market. The more there are, the more a collector knows that he can turn down your price because he can find another one that will be more negotiable.
You're right about those mail-off appraisers. They will lowball you with a price that's maybe 25% of actual value. That's because they act as a middle man in finding a collector, so they are entitled to their work, time, and cost, as well as trying to make the most profit possible. Unfortunately, whether reputable or a rip-off, it still takes the old Mark I eyeball to establish any realistic value, something an online site is unable to do from your computer.
